About Us

Hello! We’re the Stahlman Family. Farming has been in our DNA for many generations and now we are proud to include ranching. In 1995, we moved to our farm in Kaufman, TX where Texas Belles Beef was born.

4th Generation of Farmers

Since 1995, our family has lived and run cattle on our land in Kaufman, Texas. It wasn’t until 2009 when we were at a farmer’s market and tried farm-raised beef, that we even considered finishing off the beef ourselves. That idea launched us onto a mission to find the best cattle breed that could be finished on the farm and provide the best nutritional value and flavor. We tried Buelingos, Angus, and finally Akaushi cattle crosses. Our trials and tribulations on the right breed of cattle and proper way to finish off these animals is what has us excited for you all to try our beef. We are constantly looking for humane, safe ways to improve our ranching and farming techniques to bring the best, tastiest, most nutritional beef around.

All About the Beef

We began our journey to a great tasting beef product in 1995. Moving from suburbia to a 250 acre farm was a wonderful opportunity to take advantage of all things “agriculture”. We took a journey over the first 20 years to find the right herd and we believe the Akaushi/Red Angus cattle that we have make a superior product.

Our teenage daughters began by “showing” Charolais heifers (yes, it’s a thing in Texas!). Then we progressed to Buelingo—the Oreo cow—when we discovered them on a trip to Colorado. While Buelingoes are a beef cow, everyone in Texas thinks they are a dairy cow, which made marketing a challenge. Hence, with our next breed we joined the crowd and expanded our herd with Black Angus.

While attending cattle classes and seminars, we learned one of the biggest challenges in hot climates is the need for a highly heat tolerant animal to maximize production. Well, Red Angus fit the high heat tolerant need for us and we further expanded our herd. While continuing to improve our herd, we learned about this newfangled breed in the U.S.: the Akaushi/Wagyu, and the health benefits its intramuscular marbling provided. Wagyu simply translates to “Japanese cow”. Akaushi is one of four breeds from Japan known as Wagyu. Akaushi translates to “red cow” in Japanese.

Bingo! We believe an Akaushi/Angus cross achieves the perfect combination for a healthy, field hearty animal that makes delicious, marbled beef with great beefy flavor. Once you taste it, grocery store beef just doesn’t compare!

We believe that educating ourselves about cattle and ranching is incredibly important to sustaining a happy, healthy herd as well as being good stewards of the land. We realized early on that perfecting the right herd was so much more than just the right genetics. How we handle the cows while working them is always a priority. We pride ourselves on not just our journey to the right beef breed, but also humanely handling and caring for our cattle.
